<span style="font-family: "arial" , "helvetica" , sans-serif;">Mix the ingredients (coffee, milk, ice cubes, baking cocoa, caramel coffee syrup, and sugar) in a blender and blend until well mixed and foamy. Pour it into a cup and set it aside. Prepare the whipped cream. Use a chilled kitchen bowl and a chilled whisk for making the whipped cream, which needs to be chilled well beforehand. It will help to stabilize the cream and it will also speed up the process. Measure the amount of chilled heavy cream in a Pyrex bowl. Pour the cream directly from the Pyrex bowl into the chilled kitchen bowl. Whip the cream with a hand/stand mixer, using a low setting for a minute, then slowly add the sugar. Switch to the highest setting and continue to whisk for about 1 more minute (about 2 minutes in total) until frothy. Scoop the cream into a pastry bag with a decorative tip attached and pipe a large dollop of cream over the coffee mixture in the cup. Drizzle chocolate syrup over the cream. Enjoy this silky, rich & creamy concoction.</span><br />

With
the holidays approaching and cold weather outside, it is the perfect
time to turn on your fireplace and enjoy a cup of smooth, full-bodied
homemade Mulled Wine. It is an old fragrant European concoction that
is consumed during the Christmas Season, starting with the first of
Advent and is served hot, traditionally at German Christmas Markets. It
makes a nice drink also on New Year's Eve.<br />

<div style="text-align: justify;">
You will need:</div>
<ul style="text-align: justify;">
<li>1/4 liter red wine (1 cup), like Burgundy <i>or</i> Cabernet Sauvignon</li>
<li>1 teaspoon freshly squeezed lemon juice or 1 slice of a lemon (rinse the lemon before use)</li>
<li>1 teaspoon freshly squeezed orange juice or 1 slice of an orange, optional (rinse the orange before use)</li>
<li>1 stick of cinnamon</li>
<li>pinch of ground clove</li>
<li>pinch of ground anise <i>or</i> 1 star anise, either one – not both</li>
<li>1 tablespoon rock sugar (or 4 teaspoons white granulated sugar) or to taste</li>
</ul>
<div style="text-align: justify;">
This
recipe makes 1 cup of Mulled Wine. Multiply the recipe for more. If
using very dry wine, you might want to add more sugar to taste.</div>
<div style="text-align: justify;">
Directions:</div>
<div style="text-align: justify;">
Heat
the red wine with the rest of the ingredients in a pot over
medium/medium low heat until very hot, but do not allow the wine to come
to a boil, for about 20 to 30 minutes. Sieve the wine using a fine mesh
strainer or spoon out any fruit slices or dried spices that are used
and pour it into a porcelain mug or a glass coffee mug and serve it hot.
Leftovers can be reheated. Store leftover Mulled Wine without any fruit
slices, cinnamon sticks, or star anise.</div>

Butter Cookies and a cup of hot Mulled Wine late in the afternoon. This

This creamy tomato soup is simple and easy to make. It is gluten-free and dairy-free and packed with flavor.</div>

You will need:<br />
<br />
2 lb (1 kg) fresh tomatoes<br />
2 - 3 tablespoons margarine (e.g. Fleischmann's)<br />
3/4 - 1 onion (yellow or red), finely diced<br />
1 heaped tablespoon celery leaves, chopped (about 3/4 oz or 20 grams)<br />
1 bay leaf<br />
2 cups (500 ml) water<br />
a dash or two (or to taste) of soy sauce, gluten-free<br />
fine salt, to taste<br />
fresh black pepper, to taste<br />
1 teaspoon of Italian dried herbs<br />
1 tablespoon (or to taste) salt-free Mrs. Dash Original Blend<br />
pinch of nutmeg<br />
dash of curry powder<br />
dash of ground rosemary (you can grind dried rosemary in the coffee grinder to a very fine powder)<br />
dash of ground oregano<br />
dash or two of Old Bay<br />

Cut
the tomatoes into dice. In a heavy-bottomed saucepan (preferably
stainless steel), melt the margarine over medium heat. Add the onion,
celery leaves, and bay leaf. Cover, reduce the heat to very low and cook
for about 10 minutes until softened. Add the tomatoes and water and
season to taste. Cover the pot with a lid and bring it to a boil. Reduce
the heat to medium low and simmer, stirring occasionally, until all the
flavors have blended, about 30 minutes. Discard the bay leaf. Set aside
and puree the soup with a blender for a creamy texture. No thickening
or milk/cream required. It is rich in flavor the natural way. Using ripe
tomatoes intensifies the flavor and color. Serve hot and enjoy!</div>

tender cake, as well. The zebra design is very easy to make.</div>

Ingredients for the Cake:</div>

<div style="text-align: justify;">
375 grams unbleached, all-purpose flour (King Arthur recommended) (13.23 oz)<br />
3 - 4 teaspoons baking powder<br />
250 grams white fine granulated sugar (8.8 oz)<br />
1 envelope vanilla sugar (vanilla sugar by DrOetker is available in the
baking aisle of local supermarkets), optional, but recommended (or use
1/8 - 1/4 teaspoon vanilla extract)<br />
5 large eggs<br />
125 ml lukewarm water (4.23 fl. oz)<br />
250 ml corn oil or vegetable oil (8.45 fl. oz)<br />
2 tablespoons cocoa powder (unsweetened)<br />
for extra flavor, you could add 1 tablespoon white Rum (e.g. Bacardi), optional</div>

Sift
the flour into a mixing bowl. Add all the ingredients - except for the
cocoa - and mix with a hand or a stand mixer shortly on the lowest
setting, then switch to the highest setting and mix for about 2 minutes
until the dough is smooth. Split the batter in half and transfer one
half into a separate bowl. Mix the cocoa into one half of the batter
(you could also sift it in and it blends in easier and quicker). Prepare
a Springform pan (28 cm = 11 inches). Butter (use unsalted butter only)
the cake pan and dust it lightly with flour. Start by adding 1 - 2
tablespoons white batter and place it into the center of the Springform
pan. Add 1 - 2 tablespoons of dark batter directly onto the white
batter. Add 1 - 2 tablespoons of white batter onto the dark batter, then
add 1 - 2 tablespoons onto the white batter and so on. Repeat with the
rest of the batter. This pattern will achieve the zebra design. Bake the
cake in a pre-heated oven, at 350 degrees Fahrenheit (175/180 degrees
Celsius), on the lower oven rack, for about 40 minutes or until a tester
(e.g. toothpick) inserted into the center of the cake comes out clean.
Remove the cake from the oven and release the wall belt of the cake pan.
Let cool completely. Transfer the cake onto a cake tray. This cake is
also delicious when baked a day ahead.</div>

To sweeten the cake, you could add a glaze on top of the cake or simply sift powder/confectioners' sugar over it.</div>

approx. 150 grams powdered sugar/confectioners' sugar (5.29 oz)<br />
4 tablespoons white Rum or for a zesty glaze, use lemon juice instead of Rum</div>

Mix the ingredients together in a small bowl and spread it atop of the cake, using an icing spatula.</div>

Terraces are one of the most popular Christmas cookies in Germany. It is a tender butter cookie, cut out with different sizes of cookie cutters to build a terrace, baked, spread with a thin layer of raspberry jam, or red currant marmalade, or strawberry marmalade, and dusted with confectioners' sugar. This is one good looking, tasty cookie that you do not want to miss out on this Holiday Season!</div>

You will need: (Makes about 50 Terraces)</div>

500 grams unbleached, all-purpose flour, sifted (King Arthur flour recommended for best results) (1.1 pounds)<br />
250 grams unsalted butter or unsalted margarine, cold, cut into flakes (8.8 ounces)<br />
375 grams white sugar, fine granulated (13.2 ounces)<br />
6 large egg yolks<br />
pinch of salt, optional<br />
1 envelope vanilla sugar or 1/8 teaspoon of vanilla extract, optional (DrOetker vanilla sugar is available in the baking aisle at local supermarkets.)<br />
4 - 5 drops Arrak aroma/extract or 1 tablespoon Cognac or lemon zest of 1/2 lemon, optional<br />
powdered sugar/confectioners' sugar for dusting</div>

Sift the flour into a bowl (measure first, then sift). Sifting is recommended, but the cookies will turn out just fine without sifting the flour. Spread the butter flakes evenly over the flour. Add the rest of the ingredients on top and mix it all together, using your hands. Form it neatly into a ball, cover the dough with plastic foil, and chill for 30 minutes to 1 hour. Chilling the dough makes it less sticky and less brittle. Remove the dough from the refrigerator and discard the plastic foil. Dust your workplace with flour, place the dough on top, and roll it out with a rolling pin (about 3 - 4 mm = 1/8- inch thick). Use 3 different sizes of cookie cutters with beveled edges to build a terrace. Or use other items as cutters (a glass or cup) and to achieve the beveled edges, position the glass or cup onto the dough and cut around the edges with a pastry or pasta wheel. Cut out even amounts of each of the 3 sizes to make 3 layers for one terrace. Bake only cookies the same size at a time. The larger-sized cookies will require a longer baking time than the smaller-sized cookies. Cover a large baking tray with parchment paper and place only same-size cookies on top. Space them apart a little. Bake at 350 - 375 degrees Fahrenheit (175 - 190 up to 200 degrees Celsius), for about 10 minutes (largest sized cookies), on the lower oven rack. The smaller the cookies are sized, the less time it will take to bake. The smallest-size cookies need to be checked on around 5 minutes. They should achieve a golden to deep golden color. Every oven bakes a little different and gives you eventually a lighter or darker tan. It all depends on your personal preference. Just keep an eye on the cookies, since they will bake within a few minutes. Remove the baked cookies from the oven and place them onto wire racks to let them cool completely. Once all the cookies are baked and cooled to room temperature, place a dollop of marmalade (raspberry or red currant compliments the terraces best) on top (center) of the largest-sized cookie. The marmalade will "glue" the cookies together to hold them in place. Place the next smaller size cookie on top of the largest cookie with the marmalade and put a dollop of marmalade in the middle. Add the smallest sized cookie on top. You will now have 3 differently-sized layers to make one Terrace. Repeat this with all the cookies to make Terraces. Finally, lightly sift powdered/confectioners' sugar over each and every Terrace. Store them in aluminum boxes. Layer the bottom of the aluminum box with napkins and place the Terraces on top. Cover the box with a lid. They will keep fresh for a few weeks at room temperature or at a cool place. This is a very old recipe and makes such elegant Terraces, tender in texture with the perfect balance of marmalade, it will definitely be one of the connoiseur's favorite Christmas cookies.</div>
